Cocoa seeds, are the source of commercial cocoa. Fermented seeds are roasted, cracked and ground to give a powdery mass from which fat is expressed. The three intermediate cocoa products are cocoa liquor, cocoa butter and cocoa powder.

Cocoa powder can be used as an ingredient in chocolate flavored drinks, chocolate flavored desserts such as ice cream and mousse, chocolate spreads and sauces, and cakes and biscuits. It is also used in industrial applications like confectionaries, protein powder, etc. Cocoa powder is used in confectionery as a flavor ingredient and a colorant. Apart from its effect on color and flavor, cocoa powder has various properties such as alkalization, fat content, etc which would have significant impact on the end products.
